From Bío Bío Valley, Chile this is 100% Pais from 200 year old vines! The grapes were harvested by hand and destemmed. The skins are left to macerate in the finished wine for one week after fermentation, then the wine is racked to rest in old oak barrels. Unfined, unfiltered, no SO2. Intense, mineral-driven, a wine to sit and ponder!
