Elgin is one of the coolest and highest altitude sites in South Africa which means the fruit here stays crisp and fresh. JH Meyer and his family farm all of their sites organically and work as naturally as possible, while still striving to create elegant, site-specific wines. Half of this Chardonnay ages in old barrels and the other half in concrete eggs which give the wine a soft, delicate texture. Bottled with nothing added and nothing taken away, this wine does best when you let it breath for an hour or so to reveal its mushroom, earthy, umami notes.
