45% Trebbiano, 35% Malvasia, 20 % Verdicchio from the famous monastery in Lazio. The nuns continue to farm this land and create these wines as naturally as possible. Everything is done by hand and the farming is all organic. This bottling ages on the lees in stainless steel and fiberglass tanks before bottling unfined and unfiltered with the absolute minimum of sulfites. It is described as having "aromas of fennel fronds, chamomile tea, almonds, and tangerine that lead into a full but delicately rendered palate. Vitorchiano’s volcanic soils come through with a somber smoke-iron interplay, and glowing acidity lets the savory flavors coat the mouth, yet the overall impression is one of freshness and drinkability."
