Savoy enjoys a very pronounced diurnal range; very cool nights with warm, sunny days giving the fruit tension. The wine goes through full malo and spends 17-month on lees with no bâtonnage in 20% new, lightly toasted, tightly-grained French oak. Bottled without fining or filtration. Richer and creamier than the Wingtine, but still showing pronounced acidity.
