It is rare today that an Irish distillery (even in Scotland as well) uses entirely local grains, let alone 100% organically farmed grains, but Waterford Distillery is determined to create a line of whisky that fully represents a sense of place. On top of that, it is absolutely delicious and full-flavored. Notes of cherry, red apple, and cereal, with a lingering finish of brûléed sugar.
