An entirely biodynamically farmed Irish whiskey! This is basically unheard of in the region, largely because of the climate it is very hard to farm organically, let alone with a biodynamic system. The result is one of the most balanced, most flavorful whiskies (Irish or otherwise) that I have had the pleasure of tasting all year! There is a beautiful textural component with a bit of saltiness, toast, cherry puree, red apples, and vanilla. The finish seems to never end, definitely a bottle to savor!
